Healthy food

I don't know about you but when spring comes I feel like eating lighter and healthier food.I am not vegetarian but I love all kinds of vegetarian dishes.It is nice to give a break to your body staying away from the meat and the hearty food.One of my favorite spring dishes is the spinach and rice dish with a poached egg on top.It is so fast and easy to make.I sotte a medium onion,some carrots,celery and a bag of frozen spinach in some oil.I wash one and a half cups of rice and add it to the vegetables.I cook them together for 5-6 minutes before I add a can of tomatoes. I cook the tomatoes and the rice together for 5 to 10 minutes and then pore about 3-4 cups of warm water.I bring it to boil on high and then reduce the heat to low and let it simmer.When the rice is half way done I crack 5-6 eggs and they get poached while the dish is finishing cooking.I forgot to mention that I add a cube of chicken broth,I prefer Knorr.Can't tell you how delicious it is. And as I am in a very healthy mood while I was cooking this dish this morning I was sipping dandelion tea.It turned out the pesky weed is actually a very good medicinal herb that helps with a lot of ailments and helps you cleanse your body from the toxins.Actually I knew that before but I forgot.I really need to work towards going back to healthier life style.So far I am glad that I keep up with my New year's resolution to drink herb tea on daily basis. Picture number three has nothing in common with the theme of the post,it is just an eye candy.A little fairy town we saw at a plant nursery last week.

Hiking in the woods

A beautiful spring day!

Wow,it was a beautiful day yesterday!!!It was warm and sunny,radiating happiness.I spent a lot of time outside.I did some gardening,my girl and I went on a bike ride,I did some laundry and hung it in the sun to dry.Who doesn't like the smell of the sun dried laundry?We even went on a short ride to Lanesboro,a small touristic town with artistic atmosphere.We checked out the antique shops,the art gallery and sat down for an ice cream.

Saturday morning

Hoping for a nice relaxing weekend with some bike riding, hiking, sketching and gardening.The weather is going to be beautiful.

Spring flowers

It is still too early to start my vegetable patch.It is too cold.After the warm wave it got cold again and quite windy.I can't wait for the warm weather to be back so I can spend more time outside.Today I went outside for a while looking for more signs of spring in our garden.The spring flowers started coming out really strong.The light was perfect and the pictures taken with my Kindle turned out pretty good.

At the Mall of America

Last weekend we had two fun days at the Mall of America in Bloomington near Minneapolis.I wish there were an educational part in it too but no.It was pure shop-and-relax trip.So there was a lot of shopping,eating out,swimming in the pool at the hotel and enjoying of the Nickelodeon theme park at the Mall.Although my daughter is out of this age it was nice to reminiscent about her favorite cartoon characters.Dora and Blue were some of her most favorite ones.Dora was such a good babysitter that when she was on my girl would be glued to the TV screen and I could actually have time for some house work.The curious thing about the figurines on top of the Lego store is that they have been made  of Lego blocks.The beautiful painting in the seventh picture was in Norstrom.

Stopping by just to say hallo.I wish you an exciting weekend as the weather outside is so beautiful.We are going on a trip.I hope I will have some sketching/drawing time while we are there.The illustration I am posting is an old one from two or three months ago.I saw the girl's face in a dream.I wish I had more dreams like that one.

Random pictures from my archive.My daughter was looking at the old pictures in the computer two days ago.She was amazed by these pictures taken in our garden.They were from August 2013.I guess I've forgotten all about them.I love the summer feeling in them when life is so easy.

Relaxing day

We had a relaxing Saturday yesterday.It was spent typically American way,eating out and shopping.Our newfound love is Texas Road House.The food is extremely delicious and yesterday I finally got to see the waitresses square dancing.
I don're want to get you bored with the shopping part but at the mall I had some spare time to do some sketching at the food court.

Hiking in the woods

It was last Monday.The weather was warm and sunny and the urge to go outside was irresistible.My daughter came up with this idea and that was the best thing we did together that day.She showed me new trails,I didn't know existed.We observed the waking up nature and took lots of pictures.We admired the view from the top of the hill and had a snack break there.Spring brings us such wonderful times!!!

Orange

An orange cat and bright colored oranges like little suns on a glumy,cold and rainy day.Some warmth for the soul and joy for the eyes.
